This week's farm fresh basket for East Knoxville includes:
mini eggplants -or- eggplant
sweet bell peppers
zucchinis and/or yellow crookneck squash
cherry tomatoes -or- Roma tomatoes
The tomatoes and cucumbers are great in salads. Add a bunch of romaine lettuce from our add-ons, and you are all set! You can make individual salads for the week in storage containers, pop them into the fridge, and grab one whenever you'd like! The bell peppers, carrots, and squash are all great salad add-ins as well.
The eggplants are great cut into slices, seasoned, and grilled. We love to grill or pan-cook the eggplant slices and serve them on eggplant Parmesan French bread pizza.
The pattypan squash are great stuffed. Simply cook the squash in the oven until still firm, scoop out the insides and mix with bread crumbs and Parmesan, stuff it back in, and bake until soft and golden.
Carrots are great as a side dish, or enjoyed raw as a snack.
The zucchinis and yellow crooknecks are great with butter and chopped onion as a side dish. They are great chopped up and cooked into an omelet or hash browns. They are also great for stuffing with chicken salad and eating just like that.
The tomatoes are also great in an omelet, or sliced and eaten as a salad with olive oil and vinegar. They are great on a sandwich or a homemade pizza as well.
