We've tried a lot of pumpkin waffle recipes in our test kitchen. We've tested different recipes and adapted my favorite waffle recipe ever to include pumpkin and the accompanying flavors. We've enjoyed all of the recipes we tested and created, but today we give you this delicious recipe for pumpkin waffles from Epicurious.
As for syrup, while we love the traditional apple cider syrup that usually accompanies pumpkin waffles, we recently found Bobby Flay's recipe for bourbon caramel syrup and we may never go back. It's oh-so-delicious and we share it with you today.
RECIPE FOR PUMPKIN WAFFLES WITH BOURBON CARAMEL SYRUP
For the waffles:
You can keep the waffles warm as you're cooking by heating your oven to 200 degrees and keeping the waffles in there until ready to serve. You can also do this with pancakes and French toast, by the way.
For the syrup:
We tried the syrup using molasses instead of corn syrup for a richer flavor and because we love molasses. It was delicious! We also tried making it with rum extract instead of actual alcohol, and that worked just fine and was delicious as well.
Lemon juice is optional but a few squirts added into things like pancakes, waffles, and French toast, brings out the other flavors without adding a lemon flavor.
